Salad with Pears and Balsamic Vinegar of Modena
INGREDIENTS
A head of curly lettuce, 200 grams of fresh salad cutting, 150 grams of red radish and tender green, two pears abbot, three tablespoons of extra virgin olive oil, 150 grams of cottage cheese, eight walnuts, a spoon honey, salt, pepper, two lemons, Balsamic Vinegar of Modena PGI “Il Conte” and the pear juice
PROCEDURE
1) Peel the pear and cut into cubes, then sprinkle with lemon juice
2) In a pan heat the olive oil with honey, salt and pepper, making it brown the slices of pear
3) Arrange in individual dish salads and radicchio
4) Then add the ricotta, chopped nuts and slices of pear caramel
5) Drizzle with extra virgin olive oil and balsamic vinegar of Modena PGI “Il Conte” and the pear juice, salt and pepper to taste.
